Weekly Meal Plan

Here we go again. We've been a little busy (have you noticed?) and meal planning has taken a dive.  It here we are. Back at it. Cory requested a kale salad and I wanted in on the taco soup (add chips and it's delicious)


So here's the plan and color coded shopping list:

1 Can of Chickpeas, rinsed and drained
1/2 Cup of Diced Yellow Onion
1 15oz Can of Fire Roasted Tomatoes
2 Tablespoons of Curry Powder
1/2 Teaspoon of Cinnamon
1/2 Teaspoon of Cumin
1/2 Teaspoon of Ginger
2 Cloves of Garlic, minced
4 Kale Stalks, stem removed
1/8th Cup of Water

1 bunch asparagus (12 ounces), trimmed and washed
Sea salt and black pepper
2 lemons
Olive oil
3-4 large cloves garlic, minced (~2 Tbsp)
10 ounces (~5 cups) bow tie pasta (see notes if GF*)
2.5 cups unsweetened plain almond milk
3-4 Tbsp all purpose flour (sub another thickener if GF*)
1-2 Tbsp nutritional yeast (for a subtle cheesy flavor | optional)

1 bunch kale, stemmed and finely chopped 2 cups grated carrots
1/2 avocado, peeled and pitted
1/4 cup thinly sliced red onion
2 tablespoons lemon or lime juice
2 tablespoons sesame seeds, toasted
1/2 teaspoon reduced sodium soy sauce

1 box israeli couscous, prepared according to package directions
1 cup broccoli florets (from about 1/4 large head)
1 cup cauliflower florets (from about 1/4 large head)
1 fennel bulb, cored, quartered, and sliced into 1/4-inch thick slices
3 garlic cloves, minced
4 tablespoons olive oil, divided
salt and black pepper
1 tablespoon sherry vinegar
1 teaspoon chopped fresh thyme
1 teaspoon chopped fresh oregano
1/2 teaspoon lemon zest
1/2 cup toasted hazelnuts
1/4 cup chopped dried apricots
1/4 cup crumbled goat cheese

  • 1 can pinto beans
  • 1 can black beans
  • 1 can kidney beans
  • 1 can corn
  • 2 can diced tomatoes (stewed or italain)
  • 1 can original Rotell w Green Chilis
  • 1 can Vegetable Broth
  • 1 packet of Ranch
  • 1 packet of Taco Seasoning
  • 1-2 lbs of ‘meat’ (sausage links)
